I've been making menu plans on the fly the last few weeks, but last night I sat down and wrote one out. (Scanner's acting up, so you get to miss out on my sloppy handwriting! ;) It's kind of soupy, but it's a good time of year for that with high temps under 70 degrees and all those extra Thanksgiving calories we just consumed!
Here's what I came up with:
- Mon: potato soup and grilled cheese sandwiches
- Tue: pizza at Nithya and Naveen's house (yay!)
- Wed: our friend Jose from Peru comes over and the Hubs cooks South American food
- Thr: turkey enchiladas
- Fri: 3-bean soup (kidney beans, Peruvian beans, split peas)

Turkey enchiladas sounds really neat. I've used gravy on chicken breasts that I just cook on the stove top with some rosemary and thyme and whatever other herby stuff I feel like. I'm in the same boat though, not too into gravy but my husband's a fan.

ReplyDeleteGreat suggestion on the chicken...I like that kinda stuff! Also, the Hubs can dump gravy on his and I can skip it.

ReplyDeleteHey! So good to see you again. Although, I admit I miss your handwritten menu... maybe next week? We love gravy and could seriously drink the stuff with a straw. I am not sure what else to do with it other than put over chicken, turkey and tators! I love this time of year, perfect for chili and soup. (((hugs)))
