I'll take my tomato well done, thanks

Have any good recipes with cooked tomatoes?


There's the Chakchouka I told you about. (Yeah, Chanelle, we still have to figure out when you can come over for some of that.)

And it seems like these black bean quesadillas were pretty good.


We can also add the cacciatore(-ish) concoction my awesome hubby cooked up tonight to the list. He was off today, and when I came home, dinner was done! He cooked up some tomatoes and onions with some leftover pesto chicken, oh and some wine...and I'm not sure what else.... Anyway, it tasted great on top of the sesame paysanne baguette I picked up from Wildflower on the way home.



He also cut up the rest of the tomatoes and labeled the bag, so we wouldn't get mixed up and eat them raw. I love him.

    A recipe for using tomatoes that works for a brunch, lunch, or light dinner.

    Put EVOO in a skillet, and chopped garlic (1-2 cloves) and lightly saute, add sliced tomatoes and cook until mushy. Break 4-5 eggs on top and break yokes. Add salt, pepper, (basil optional). Cook covered until eggs are cooked but not hard. (Like eggs over easy). Slip tomato egg concoction onto a plate(s) and eat with wheat pita bread.

    the recipe your aunty gave you is remarkably like a concoction a Turkish friend made for me one time.
    Thought you'd find that interesting. I guess Mediterranean cultures like to use a lot of the same ingredients!
